Shrimp Quinoa Bowl with Garlic Lime Dressing

Ingredients
  

  • 1 cup Quinoa Rinsed well.
  • 2 cups Water or low-sodium broth Broth adds so much extra flavor!
  • 1 lb Raw shrimp Peeled and deveined; pat them very dry.
  • 1 teaspoon Chipotle chili powder For that signature smoky kick.
  • ½ teaspoon Cayenne pepper Adjust if you prefer less heat.
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • 1 tablespoon Olive oil For searing the shrimp.
  • 1 cup Black beans Drained and rinsed.
  • 1 cup Pico de gallo Store-bought or homemade both work great.
  • 1 Avocado Sliced right before serving.
  • ½ cup Corn kernels Fresh, frozen, or canned.
  • 1 handful Fresh cilantro Chopped for a burst of freshness.
For the Dressing
  • 3 tablespoon Olive oil
  • 2 tablespoon Fresh lime juice
  • 1 teaspoon Tamari soy sauce Or regular soy sauce.
  • 1 teaspoon Sriracha Add more if you like a little zing!
  • 1 clove Garlic Minced finely.

Equipment

  • 1 Medium saucepan Use one with a tight-fitting lid to ensure the quinoa steams perfectly.
  • 1 Large skillet Cast iron is my favorite for getting that gorgeous sear on the shrimp!
  • 1 Fine mesh strainer Essential for rinsing the quinoa to remove any bitterness.
  • 1 Small mixing bowl For whisking your dressing until it's nice and glossy.

Method
 

  1. Start by giving your quinoa a good rinse in a fine-mesh strainer until the water runs clear—this is my little secret for removing that bitter "soapy" taste. Add it to your saucepan with water or low-sodium broth and bring it to a boil. Once it's bubbling, turn the heat down to low, pop the lid on, and let it simmer for 15 minutes.
  2. This is the part that requires a little patience! Remove the pan from the heat but keep that lid on for 5 more minutes. Letting it steam off the heat makes the quinoa light and fluffy rather than mushy. After 5 minutes, fluff it gently with a fork and set it aside.
  3. While the quinoa is resting, pat your raw shrimp completely dry with a paper towel. I promise, dry shrimp sear so much better! In a bowl, toss the shrimp with chipotle chili powder, cayenne pepper, garlic powder, and salt until they are beautifully coated in those smoky spices.
  4. Heat your olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the raw shrimp in a single layer. Don't crowd them—they need their personal space to get that perfect crust! Cook for 2 minutes, flip, and cook for another 1-2 minutes until they turn pink and form a "C" shape.
  5. In a small bowl, whisk together the olive oil, fresh lime juice, tamari soy sauce, sriracha, and garlic. Keep going until the dressing looks glossy and smooth. I always sneak a little taste here to see if it needs an extra pinch of salt!
  6. Now for the fun part! Scoop a generous portion of quinoa into four bowls. Top each with the warm raw shrimp, black beans, pico de gallo, avocado, and corn kernels. Drizzle that zesty dressing over everything and finish with a sprinkle of fresh cilantro.
