- Prepare the Sushi Rice (Rinse & Steam): First, rinse your sushi rice under cold water until the water runs clear, this prevents it from getting too gummy! Cook it up, and while it's still steaming and warm, gently stir in the rice vinegar, sugar, and salt. It’ll look beautifully glossy and smell just like your favorite sushi spot.
- Build the Base (Layer & Press): Grab your greased 9x13 dish and spread that seasoned rice into an even layer. I like to press it down gently with a spatula so it stays together when you scoop it later. Now, sprinkle the furikake seasoning generously over the top. This is where all that deep, umami flavor lives!
- Flash-Bake the Salmon (Preheat & Bake): Preheat your oven to 375°F. Place your salmon filets on a foil-lined sheet and bake for just 7-8 minutes. We want it opaque but still tender. Once it’s out, use a fork to flake it into chunks. It’s okay if it’s a tiny bit underdone in the middle—it's going back in!
- Mix the Creamy Filling (Fold & Combine): In your large bowl, mix the flaked salmon, chopped imitation crab, softened cream cheese, kewpie mayo, and sriracha. Stir it until it's a dreamily creamy mixture. If your family loves a little extra kick, don't be afraid to add another squeeze of sriracha here!
- Final Assembly (Smooth & Spread): Spread that luscious salmon and crab mixture right over your furikake-covered rice. Use the back of a spoon to get it all the way to the corners. We want every single bite to be perfectly balanced with rice and topping.
- The Golden Bake (Bake): Pop the whole dish back into the oven at 375°F for 10-15 minutes. You’re looking for the edges to turn a soft golden brown and the center to reach 145°F. Your kitchen is going to smell absolutely incredible right about now!
- The Signature Drizzle (Garnish): This is the fun part! Once it’s out, zigzag some extra kewpie mayo and sriracha over the top. Finish with a handful of green onions and sesame seeds. It looks so professional, William always says it looks better than takeout!
- Scoop and Serve (Serve): Serve it right away! Scoop a big portion onto a nori sheet and fold it like a little taco. The warm, creamy salmon against the crisp seaweed is a match made in heaven. Enjoy, my friend!

The Cream Cheese Secret: Make sure your cream cheese is truly soft before mixing, or you'll have little white lumps. If you're in a hurry, 15 seconds in the microwave does the trick!
No Cream Cheese? No problem! Just swap it for extra Kewpie mayo and a splash of lemon juice to keep that tangy brightness.
Healthy Swap: For a low-carb version, this works wonderfully with cauliflower rice. Just make sure to squeeze all the moisture out of the cauliflower before layering.
Storage: Keep leftovers in an airtight container for up to 3 days. Reheat with a damp paper towel to keep the rice from drying out, though it's so good, there are rarely leftovers at my house!
