Ingredients
  

For the Brownie Base
  • ½ cup unsalted butter Melted and slightly cooled.
  • 1 cup granulated sugar
  • 2 large eggs Room temperature for the best emulsion.
  • 2 teaspoons pure vanilla extract
  • ¼ cup unsweetened cocoa powder
  • ⅛ teaspoon salt
  • 1 ½ teaspoons red gel food coloring Gel gives a much more vibrant color than liquid.
  • ¾ teaspoon white vinegar Don't skip, this provides the classic red velvet tang!
  • ¾ cup (94g) all-purpose flour Measured by weight if possible.
For the Cheesecake Swirl
  • 8 ounces full-fat brick cream cheese Must be very soft (room temperature).
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon pure vanilla extract

Method
 

  1. Start by preheating your oven to 350°F. I always line my 8-inch square pan with parchment paper; it’s a little trick I learned to make sure those beautiful brownie edges stay perfectly intact when I lift them out. Give it a light spray with nonstick spray too!
  2. Melt your unsalted butter in the microwave. Let it sit for a minute, we don't want to scramble the eggs! Stir in the granulated sugar until it's pale and a bit grainy.
  3. This is where the magic happens! Stir in the pure vanilla extract, unsweetened cocoa powder, salt, red gel food coloring, and that essential white vinegar. Watch the batter turn that gorgeous, deep red color, it always makes me smile.
  4. Whisk in the beaten eggs until the batter looks glossy. Now, very gently, fold in the all-purpose flour. My grandmother always told me to stop the moment the white streaks disappear, over-mixing is the enemy of a fudgy brownie!
  5. In a separate bowl, use your hand mixer to beat the full-fat brick cream cheese, granulated sugar, egg yolk, and pure vanilla extract. Make sure that cream cheese is super soft so your swirl is silky and lump-free.
  6. Spread most of the brownie batter in the pan, but save about 3-4 tablespoons. Drop dollops of the cheesecake mixture on top, then drizzle the reserved red batter over that. Use a butter knife to create long, graceful swirls. Like my daughter Emma says, this is where it becomes 'art'!
  7. Pop them in the oven for 28-30 minutes. You’re looking for a few moist crumbs on a toothpick. If the toothpick comes out clean, they might be a bit dry, so keep a close eye on them toward the end!
  8. I know it’s hard to wait, but let these cool completely in the pan. For those picture-perfect bakery slices, I like to chill the whole pan in the fridge for 30 minutes before cutting. Your patience will be rewarded with the cleanest, fudgiest squares.

Softening is Key: Ensure your cream cheese is truly room temperature (leave it out for at least 45 minutes). This prevents a grainy cheesecake texture.
Gluten-Free Option: You can easily swap the all-purpose flour for a 1-to-1 gluten-free baking blend.
