Ingredients
  

  • 1 ½ cups Warm water Aim for 100°F (38°C).
  • 2 ¼ teaspoons Instant or active dry yeast 1 standard packet.
  • 1 tablespoon Brown sugar Can substitute with granulated sugar.
  • 1 teaspoon Salt Fine sea salt works best for the dough.
  • 1 tablespoon Unsalted butter Melted and slightly cooled.
  • 4 cups All-purpose flour Measure by spooning and leveling.
  • ½ cup Baking soda For the alkaline water bath.
  • 9 cups Water For the boiling bath.
  • 2 tablespoons Coarse sea salt For topping.

  • 1 Stand mixer with dough hook You can also knead by hand if you don't have a mixer!
  • 1 Large stockpot Used for the baking soda bath.
  • 1 Slotted spoon or spider strainer Perfect for lifting the bites safely from boiling water.
  • 2 Baking sheets Use silicone mats for the best non-stick results.
  • 1 Bench scraper or sharp knife To cut the dough into even pieces.

Method
 

  1. Hi friends! Let's get started. In your mixer bowl, whisk together the warm water, yeast, and brown sugar. I always wait about 5 minutes until it's nice and foamy, that’s how you know the yeast is alive and ready to help our dough rise, just like Grandma taught me!
  2. Now, let's add the salt, melted butter, and 3 cups of the all-purpose flour. Give it a slow mix for a minute. Slowly add the remaining flour until the dough stops clinging to the sides. It should feel soft and happy, not dry!
  3. Switch to your dough hook and let it knead for 5 minutes. If you're doing this by hand, it’s a great little workout! We’re looking for a smooth, tacky texture. Give it a little poke, if it bounces back slowly, it's perfect.
  4. Cover your dough with a cozy towel and let it rest for 10 to 30 minutes. This gives you just enough time to preheat your oven to 400°F and get your baking sheets ready with silicone mats.
  5. While the dough rests, bring 9 cups of water and the baking soda to a rolling boil in your large pot. This bath is my secret to that gorgeous mahogany color and that 'mall-style' pretzel smell we all love!
  6. Roll your dough into long ropes, about 20 inches each. Use your bench scraper to cut them into 1.5-inch pieces. Don't worry if they aren't perfect, homemade charm is what makes them taste better!
  7. Drop about 10 bites into the boiling water for just 10-15 seconds. Use your slotted spoon to scoop them out. Sprinkle that coarse sea salt on immediately while they're still wet so it sticks perfectly.
  8. Pop them in the oven for about 15 minutes. You’re looking for a deep, dark golden brown. Your kitchen is going to smell absolutely heavenly right about now!
