- Start by giving your quinoa a good rinse in a fine mesh strainer—this is a tip I learned early on to make sure it tastes nutty, not bitter! Add it to your saucepan with water or beef broth, bring it to a boil, then turn it down low and cover. Let it simmer for about 15 minutes until those cute little 'tails' pop out.
- While the quinoa does its thing, pat your flank or sirloin steak dry with a paper towel. Trust me, a dry steak is the only way to get that deep brown sear we love! Season both sides generously with salt and black pepper.
- Get your cast iron skillet smoking hot with a drizzle of olive oil. Lay the steak in—you want to hear that loud sizzle! Let it cook undisturbed for 3-4 minutes to build a crust that would make my grandmother proud.
- Flip the steak and cook for another 2-4 minutes. I always use my meat thermometer to hit 145°F for a perfect medium. Now, this is the hard part: let it rest on a board for 10 minutes. It keeps all those delicious juices inside where they belong!
- While the steak rests, whisk together your tahini, lemon juice, garlic, and olive oil. If it feels a bit shy and thick, just add a teaspoon of water at a time until it's perfectly 'drizzle-able'.
- Slice your rested steak thinly against the grain. You’ll see the lines of the muscle; just cut across them to ensure every single bite is tender enough to melt in your mouth.
- Fluff the quinoa and divide it into bowls. Top with baby spinach, cherry tomatoes, cucumber, and red onion. Add your steak slices, a sprinkle of feta cheese, and that creamy dressing. Dinner is served!
