  • 1 Large Egg Room temperature.

  • 1.5 teaspoon Vanilla extract Pure extract is best for that bakery aroma.
  • 320 g All-purpose flour Measure with a scale for accuracy!
  • 1 teaspoon Baking soda For the perfect rise.
  • 0.25 teaspoon Salt To balance the sweetness.
  • 0.5 cup Fresh raspberries Roughly chopped.
  • 0.5 cup Graham crackers Roughly chopped to mimic a cheesecake crust.

Method
 

  1. Let's start with the heart of the cookie! In a small bowl, whisk together your softened cream cheese and powdered sugar until it's silky smooth. I love seeing the lumps disappear, it reminds me of making frosting with my grandmother on quiet Sunday mornings.
