  • 1 pinch salt To balance the sweetness.
  • 0.5 cup fresh strawberries Sliced.
  • 0.5 cup fresh blueberries Whole.
  • 2 tablespoons sliced almonds For a lovely crunch.
  • 1 tablespoon chia seeds Added fiber and texture.

Method
 

  1. Start by placing your white quinoa in a fine mesh strainer. Run cold water over it, moving it with your fingers until the water is clear. This is my favorite little kitchen secret, it washes away the bitter "saponin" coating so your breakfast tastes light and sweet, never soapy!
  2. In your small saucepan, combine the rinsed white quinoa and milk of choice. Stir in the cinnamon, vanilla extract, and a salt. Bring it to a gentle boil over medium-high heat. Using milk instead of water makes it so creamy—it reminds me of the warm porridge my grandmother used to make on chilly mornings.
  3. Once boiling, turn the heat to low and pop the lid on. Let it cook for 13-15 minutes. Maria’s Tip: No peeking! Keeping that lid closed traps the steam that makes the quinoa fluffy. You’ll know it's done when the liquid is gone and the little "spirals" appear on the grain.
  4. Remove from heat and let it sit with the lid on for 5 minutes. This patience pays off with the best texture! After 5 minutes, fluff it gently with a fork and stir in the honey or maple syrup.
