Ingredients
  

  • 6 large eggs Older eggs peel better than fresh ones!
  • 3 tablespoons mayonnaise Check labels to ensure it's certified GF.
  • 1 teaspoon Dijon mustard Adds a lovely depth of flavor.
  • 1 teaspoon lemon juice My "secret" ingredient for brightness.
  • ¼ teaspoon smoked paprika Plus extra for a beautiful dusting on top.
  • 1 pinch Salt and black pepper To taste.
  • 1 tablespoon Fresh chives Finely chopped for garnish.
  • 2 slices cooked bacon Optional; crumbled for a salty crunch.

Equipment

  • 1 Medium saucepan Use one large enough to fit eggs in a single layer.
  • 1 Large bowl For the ice bath to stop the cooking process.
  • 1 Piping bag or zip-lock bag For that beautiful, bakery-style swirl.
  • 1 Fine mesh strainer or fork Pushing yolks through a strainer makes the filling extra velvety!

Method
 

  1. Gently place your 6 large eggs in a saucepan and cover with cold water. Bring them to a rolling boil, then pull the pan off the heat and cover it. Let them sit for exactly 12 minutes, this is my grandmother's secret to that perfect pale yellow yolk without the dreaded grey ring!
  2. While the eggs "cook" off the heat, prep a bowl with cold water and plenty of ice. Once the timer goes off, tuck those eggs into their chilly bath for 10 minutes. This stops the cooking and makes the shells slide right off!
  3. Gently peel the eggs and slice them lengthwise. I love seeing that bright center! Pop the yolks into a mixing bowl and set your whites on a platter. If they slide around, a little damp paper towel under them helps keep them steady.
  4. Mash those yolks with a fork until fine. Now, stir in the 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon lemon juice, and ¼ teaspoon smoked paprika. Whisk it until it’s smooth and dreamy. Taste it! Does it need a pinch of Salt and black pepper? Trust your palate here.
  5. Spoon the filling into a zip-lock bag and snip the corner. Pipe a generous swirl into each egg white. To finish, I like to give them a "snowfall" of extra smoked paprika and a sprinkle of Fresh chives. If you're feeling fancy, add those cooked bacon crumbles!

Notes

Make Ahead: You can make the filling and whites a day early! Just keep them stored separately in airtight containers and pipe them right before your guests arrive.
The Peel Trick: If your eggs are super fresh, add a teaspoon of baking soda to the boiling water to help the shell release.
Variations: Not a mayo fan? Swap it for full-fat Greek yogurt or even mashed avocado for a "Green Goddess" style egg!
Storage: These stay fresh in the fridge for up to 2 days, but honestly, in my house, they never last more than 20 minutes!
