Coconut Lime Refresher

This Coconut Lime Refresher is a light, tropical 5-minute drink made with hydrating coconut water and fresh citrus. It’s my favorite way to bring a little "vacation feeling" into our home on a busy weeknight!

Ingredients
  

  • 1 ounce fresh lemon juice Squeezed fresh for the best flavor.
  • 1 ounce fresh lime juice One medium lime usually gives you exactly one ounce.
  • ½ ounce simple syrup Adjust this if you like things a bit sweeter!
  • 2 ounces coconut water Use unsweetened for a clean, natural taste.
  • 2 ounces club soda Add this at the very end to keep the bubbles dancing.
  • 1 scoop Ice Use fresh ice for the shaker and the glass.
  • 2 ounces vodka or gin Optional—only if you want to make it a "spiked" version!

Equipment

  • 1 Stainless Steel Cobbler Cocktail Shaker Use a mason jar with a tight lid if you don't have a shaker!
  • 1 Handheld Manual Citrus Press Helps get every last drop of juice out of your citrus.
  • 1 Highball Glass A tall glass is best to keep that fizz trapped and bubbly.

Method
 

  1. First, grab your shaker and fill it about three-quarters full with Ice. I always love the sound of the ice hitting the metal, it reminds me of getting ready for a fun evening! Pour in your fresh lemon juice, fresh lime juice, simple syrup, and that hydrating coconut water. If you're having one of those days where you need a little 'extra' kick, go ahead and add your vodka or gin here too.
  2. Secure that lid nice and tight! Now, shake it vigorously for about 15 to 20 seconds. You’ll know it’s ready when the outside of the shaker feels frosty and cold against your hands. This is the secret to getting that perfectly airy, chilled texture my grandmother always said made a drink feel professional.
  3. Fill your tall highball glass with fresh Ice, don't use the ice from the shaker as it's already started to melt! Strain your beautiful, cloudy mixture into the glass. Now, gently pour the club soda down the side. I like to do it slowly so we don't lose any of those happy bubbles.
  4. Thread a lemon and lime wedge onto a pick and place it right on top. There you have it! Take a sip and imagine you're sitting poolside. It’s so simple, but it truly feels like a treat.

Notes

Make it Creamy: Swap the coconut water for full-fat coconut milk to make a richer, dessert-like version.
Prep Ahead: You can mix the juices, syrup, and coconut water in a jar 24 hours in advance. Just don't add the club soda until you are ready to serve!
Sweetness Tip: If your limes are particularly tart, add an extra splash of simple syrup to balance it out.
