- Hi friend! Let’s get started by preheating your oven to 375°F. While that warms up, pop your mixing bowl and beaters in the freezer. My grandmother always said cold tools make the fluffiest cream, and she was right!
- Stir your graham cracker crumbs, granulated sugar, and melted butter until it feels like wet sand. Press it firmly into your pan, I like using the bottom of a measuring cup to get it really flat, and bake for 8 minutes. Let it cool completely in the fridge; we don't want a warm crust melting our layers!
- In your saucepan, whisk the granulated sugar, cornstarch, and orange juice until smooth. Fold in those beautiful blueberries and simmer for 8-10 minutes. It’ll turn into a gorgeous, glossy jam. This needs to be stone-cold before we use it, so give it plenty of fridge time!
- Beat 1 cup of heavy cream in your chilled bowl until stiff peaks form. In another bowl, cream together the softened cream cheese, powdered sugar, and vanilla extract. Gently fold the whipped cream into the cheese, this makes it light as a cloud! Spread it over your cooled crust.
- Once your blueberry mixture is completely cool, gently spoon it over the cream cheese layer. Use a light touch so the layers stay distinct and beautiful.
- Whip the remaining heavy cream, powdered sugar, and vanilla extract until thick. Spread this fluffy cloud over the berries. Now comes the hard part: let it chill for at least 2 hours (or overnight) to set. Trust me, it’s worth the wait for that perfect slice!
